Recipe: Banana Bread

One of my favorite recipes since childhood comes from a Dutch cookbook, Eet Smakelijk, passed along through my mother’s side of the family. I’ve always found banana bread to be more than a sweet dessert–it makes a great snack after a long day hard at work, especially when combined with a nice glass of milk.

Anyway, here is the recipe for creating two loaves:

Ingredients:

-3/4 cup margarine

-1 1/2 teaspoon of baking soda

-1 1/2 cups of sugar

-1 1/2 teaspoon of salt

-4 eggs

-1 1/2 teaspoon of vanilla

-3 cups of flour

-3/4 cup of nuts, chopped (optional)

Directions:

-Preheat oven to 350 Degrees Fahrenheit.

-Grease two 8 x 4 x 2” loaf pans.

-Cream margarine and sugar.

-Add eggs and bananas.

-Sift together flour, soda, and salt.

-Add sifted ingredients, mixing well.

-Mix in vanilla (and nuts, if desired).

-Pour into pans.

-Bake 60 to 75 minutes. Cool 10 minutes, and then remove from pans.
